This vegan treat is great for lunch boxes and picnics. The avocado and seeds provide healthy unsaturated fats, helping keep your heart and metabolism healthy. For an added protein boost, swap the jackfruit for marinated tofu, tuna or chicken breast.
Serves 1
80g Sushi rice (cooked)
100g Jackfruit (ripe)
1/4 Avocado
1 tbsp Sesame seeds
1/20 (5g) Liquid amino acids
1 Nori Sheet
0.5 tbsp Sesame oil
1. Marinade the jackfruit in the liquid aminos in season to taste.
2. Lay your sushi nori on an a sushi mat and press an approximately 2cm thick layer across ¼ of the
sheet.
3. Dent the middle of the rice and layer on jackfruit and crushed avocado.
4. Gently use the sushi mat to slowly roll the sushi into a log. Once rolled, cut into bitesize pieces.
5. Enjoy as is, or with a sauce of your choice, wasabi, and pickled ginger.
