Spicy Chicken Burger with Mango

This is a really quick crowd-pleaser that's packed full of protein and vitamin C to keep your muscles strong and your immune system running at full speed. The avocado has a great fat profile, giving you plenty of MUFAs (monounsaturated fatty acids) to help maintain a healthy heart and keep you nourished for your next workout.

Serves 2

Ingredients

2 small chicken breasts – ½ lb (200g)2 brioche buns
1 medium mango
½ avocado
1 tbsp plain flour
2 tsp chilli flakes
1 lime
1 handful mixed leaf salad (10g)
2 tbsp sweet chilli sauce

Method

1. Lay the chicken breasts out on a chopping board and cover with cling film. Season with salt and pepper, the chilli flakes and the zest of the lime.

2. Using a rolling pin, beat the chicken until about ½ inch (1cm) thick.

3. In a large mixing bowl, add the flour and the chicken breasts and coat evenly, shaking off any excess.

4. Heat the oil over a medium heat and cook the chicken for 5-6 minutes each side, until it turns golden.

5. Meanwhile, open the buns and divide the salad between the two bases. Remove the skin from the avocado and slice into eighths.

6. Slice the mango (avoiding the stone) from top to bottom, then trim so that you have 2 large ½ inch (1cm) slices with no skin, about the same size as the chicken breasts.

7. Once the chicken is cooked, turn off the heat and let rest in the pan. Chuck in the mango slices for 2 minutes on each side, to heat through.

8. Once rested, lay the chicken on top of the salad, then top with the mango and the avocado slices.

9. Squeeze over the juice of the lime.

10. Drizzle over the sweet chilli sauce, top it with the other half of the bun and dig in! Be careful, it’s slippery!
