Spicy celeriac soup

Ingredients (Serves 5)

2 Celeriacs (1.5kg)

1 Leek (180g)

2 Vegetable stock cubes (20g)

1 Tbsp (2.7g) Fresh thyme

2 Tsp Garlic (Chopped)

1 Tbsp Ground pepper

1/4 (1g)Tsp Green chilli pepper

4 cups (840g) Hot water

Method

1) Peel the celeriac and cut them into bite size cubes.

2) Slice the leek into rings and discard the root end.

3) Mix the stock cubes and water until well combined

4) Combine all of the ingredients in a large soup pot. Bring to the boil and then simmer with the lid on for 30 minutes.

5) The celeriac should now be soft. Allow the mixture to cool before transferring it into a blender.

6) Blend for less than a minute until you have a creamy consistency.

7) When ready to eat, heat through again on a medium heat for seven minutes. Serve hot.
