This recipe uses spelt flour which adds a sweet, nutty taste - excellent when paired with cashew butter! The cashews are full of antioxidants and vitamins, along with plenty of good mono- and polyunsaturated fats to keep your heart and metabolism healthy.
Serves 4
150 g (5 oz) Spelt flour
1 tsp Baking powder
2 Eggs
5 tbsp Maple syrup
1 tsp Salt
200ml Oat milk (or alternative)
4 tbsp Cashew butter
100ml Water
For the pancakes:
1. Combine the oat milk, 1 tbsp of maple syrup, and eggs.
2. Mix the flour, a pinch of salt, and baking powder in a bowl.
3. Add your liquid mixture of milk, syrup and eggs to the bowl. Whisk until smooth.
4. Spoon mix into a non stick pan, and flip once bubbles rise to surface. Remove when cooked
through.
For the sauce:
1. Combine the cashew butter, remaining maple syrup and salt, and water in a hot pan and mix until
smooth.
2. Serve hot, poured over pancakes.
