These mushroom egg boats are a rich source of vitamins and minerals with a variety of benefits. This recipe is low-calorie but high in fiber and protein, helping to keep you full longer and manage blood sugar levels.

Ingredients:

3 portobello mushrooms 

3 egg whites

1 green onion/spring onion strand

2 tbsp low fat feta (30 g) 

3 basil leaves

Instructions: 

  1. Preheat oven to 350° F (175 C)
  2. Chop green onions and basil
  3. Pour one egg white into each mushroom top 
  4. Top each mushroom with green onions, basil and feta 
  5. Bake for 35 minutes
