Mediterranean Chopped Salad

Mediterranean style chopped salad

Ingredients (serves 1)

Salad

1/2 cup Persian cucumbers (100g)

1/2 cup cherry tomatoes (100g)

1/2 cup red onion (70g)

1/3 cup parsley (20g)

1/3 cup pomegranate seeds (80g)

1/3 cup mint leaves (20g)

1/3 cup avocado (50g)

Dressing

1 Tbsp Tahini (sesame paste) (15g)

3 Tbsp water (45 ml)

1/4 lemon

Salt and Pepper to taste

Method

1) Chop the red onion and set aside in a bowl of ice water for at least 10 mins. This takes the bite out of the raw onions.

 

2) To create the dressing, mix all the Tahini dressing ingredients in a small bowl and squeeze the juice of the 1/4 lemon. Mix well until the dressing is smooth and creamy in both color and consistency.

 

3) Chop all the mint, parsley, tomatoes, cucumbers and avocado into small pieces.

 

4) Drain the chopped onion and place in a bowl with the other chopped herbs, vegetables and the pomegranate seeds.

5) When ready to serve, remix the dressing and drizzle over the top of the salad.

 

Tip: This salad is fabulous with any form of lean protein and delicious with a chopped boiled egg.
