Healthy Buddha Bowl

A Buddha Bowl we made earlier!

Ingredients (serves 2)


200g natural yogurt

1/2 tsp garlic granules (3g)

1/4 tsp chili powder (1g)

1/4 tsp ground turmeric (1g)

1/4 tsp cumin powder (1g)

1/2 tsp coconut sugar (2g)

Salt and pepper to taste


2 cups white cabbage (200g)

2 cups wholegrain rice (200g)

1 cup cooked red kidney beans (100g)

1/2 avocado (75g)

1) Begin by mixing all the dressing ingredients and set aside. You can add more chili powder if you prefer a spicier dressing.


2) Chop the cabbage into small bitesize pieces.


3) Cook the rice according to packet instructions.

4) Thinly slice the avocado.


5) Now combine all the ingredients in a bowl. Add the dressing before serving, and garnish with coriander/cilantro.
