Cheesy broccoli nuggets

These delicious and easy to prepare cheesy broccoli nuggets are high in vitamin C & K, and offer a well-balanced nutritional profile.  Perfect as a side dish, or on their own as a nutritious, satisfying snack any time of the day


2 cups (150g) broccoli
3 medium eggs (whisked)
1 cup, grated (113g) cheddar
2 Tbsp fresh parsley (10 g)
½ tsp garlic powder (2g)
¼ tsp salt (1g)
1 cup (108g) breadcrumbs


  1. Heat oven to 375 F (190 C) and line a baking sheet with baking paper
  2. Grate (or blend) broccoli, place in a medium/large bowl
  3. Stir in rest of ingredients apart from breadcrumbs and mix into a uniform texture
  4. Divide into 6 evenly sized nuggets (12 for bite-sized nuggets) and roll in a bowl of breadcrumbs.
  5. Place nuggets onto the baking sheet and bake for 25 minutes until slightly browned.
