Recipe: Blue bubble patties

Ingredients (makes five)

2 cups potatoes, preferably blue (350g)

2 cups savoy cabbage (300g)

1 cup frozen peas (100g)

1.5 cups shallots (200g)

1 tbsp olive oil (15ml)

1 tsp white wine vinegar (5ml)

1 tbsp ground black pepper (15g)

Salt to taste

Method

1) Peel the potatoes, cut into chunks, and place in a pot of boiling water. Simmer for 20 mins.

2) In the meantime, chop the cabbage.

3) In another pot, boil water and add the cabbage together with the frozen peas. Cover and simmer for 15 mins.

4) Drain the potatoes and mash with a fork.

 

5) Then drain the cabbage and peas. Squeeze as much water out of them before mixing with the potatoes.

 

6) Slice the shallots. In a frying pan, heat the oil and add the shallots. On a medium heat, allow them to soften for 5 mins.

7) Mix shallots with the mashed ingredients and add the salt, pepper and white wine vinegar.

8) Divide into 5 burger shapes.

 

9) Finally grill each side for 5 mins. Serve warm.

 

Tip: This is especially good when served with a poached egg on top of each patty.
