Avocado and tomato courgetti 30% OFF everythinh - 'FITGIFT17'

Ingredients (serves 1)

To use as a side dish for a protein source of your choosing


1 courgette/zucchini (300g)

1 cup cherry tomatoes (150g)

1/4 cup sun dried tomatoes (30g)

4 spring/green onions (20g)

1/4 cup olives (50g)


1/2 large avocado (150g)

2 garlic cloves

1 Tbsp Lemon juice (15ml)

1 green pepper chili (15g)

Salt and pepper to taste

1) Mash the avocado in a bowl with the lemon juice. Finely chop the garlic and chili and add to the bowl. Season well and set aside.


2) Place the cherry tomatoes under the grill/broiler on medium heat for 10 mins, turning over halfway through.

3) Using a spiralizer or peeler, peel/spiralize the courgette to make strands similar to spaghetti.


4) Chop the onions, olives, and sun dried tomatoes.


6) Mix all courgetti ingredients well and sprinkle with fresh basil leaves. Serve next to your protein source.
