King Prawn Taco Lettuce Wraps

These guilt free tacos are a delicious alternative to their more calorific counterparts. The raw onions are packed with flavonoids which help promote heart health, while the tomatoes are rich in another antioxidant, lycopene. The king prawns are a great source of protein and omega-3 polyunsaturated fats.

 

Ingredients

200 g Romaine lettuce

1/2 Tomato

1/2 Red onion (diced)

1 Bell pepper (sliced)

80 g Black beans

1/2 Avocado

1 handful of coriander 

6 King prawns

1/2 tsp Paprika

1/4 tsp Garlic powder

1/2 tbsp Olive oil

1/4 Lime

 

Instructions

1. Devein the king prawns and season with paprika, garlic, and olive oil. Cook for 10 mins at 220C (430F).

2. Combine the coriander, diced tomatoes and onions to make a salsa.

3. Use a fork to crush the avocados and black beans into a chunky paste.

4. To assemble your tacos, top a lettuce leaf with your black bean and avocado paste, salsa, sliced peppers and chicken breast. Repeat until all toppings are used.

5. Top with lime juice and enjoy!
